How to Deep Clean a Restaurant: A Closing Time Checklist
Restaurant deep cleaning is the difference between passing a health inspection and failing one. Beyond the daily wipe down, a weekly deep clean covers the spots that grease, food residue and bacteria build up: hood vents, oven interiors, walk in cooler floors, prep table seams. This guide walks the closing crew through a full deep clean.
Before you start
- Clear all food from prep surfaces
- Dispose of waste, swap out trash bags
- Remove dish racks and put dishes through a sanitizing wash
- Set up wet floor signs at all entry points
- Lock the front door if doing the dining room
- Suit up with the right PPE (gloves, slip resistant shoes, eye protection for chemicals)
Kitchen — line and prep area
Hood and exhaust
Filters out, soak in degreaser. While they soak, scrub the hood interior with a heavy duty alkaline degreaser. Rinse. Reinstall filters. Quarterly: have the duct work cleaned by a certified service to meet NFPA 96.
Cooking equipment
Grills, fryers, ovens, salamanders. Scrape with a grill brick or scraper while still warm. Apply degreaser, dwell, scrub, rinse. Pull fryer baskets and clean separately. Drain fryer oil at the schedule the kitchen uses (usually weekly).
Prep tables
Clear, scrub with degreaser, rinse, sanitize with a quaternary or chlorine sanitizer per the label. Pay attention to the seams where the table top meets the legs — bacteria breeds there.
Walk in cooler and freezer
Empty completely (or work in halves so product stays cold). Pull all shelving out. Wash the walls, floor and ceiling with a food safe cleaner. Rinse. Sanitize. Replace shelving with sanitized racks. Reach in coolers
Same process as walk in. Check door gaskets — replace if cracked. Wipe handles, fingerprints and exterior.
Dish station
Three compartment sink: clean wash, rinse, sanitize compartments. Drain trays. Scrub the sprayer and faucet handles. Sanitize. The dish machine itself: descale weekly with a dish machine descaler, rinse thoroughly.
Floors
Sweep first to remove all debris. Apply degreaser to the entire floor including the toe kicks under equipment. Scrub with a deck brush or auto scrubber. Squeegee to floor drains. Pour boiling water down the drains plus an enzyme drain cleaner once a week to control fly breeding.
Dining room
Tables and chairs
Wipe with a fresh sanitizer solution. Lift cushions and clean underneath. Wipe chair legs and rungs.
Booths
Vacuum first to remove crumbs and debris. Spot clean upholstery. Wipe down vinyl or leather seats with a leather/vinyl cleaner.
Floors
Sweep, dust mop, then mop with a neutral pH cleaner. Carpet areas: vacuum thoroughly, spot clean stains, schedule extraction monthly.
Windows and glass
Streak free glass cleaner inside. Exterior weekly.
Light fixtures
Wipe down weekly. Pendant lamps and chandeliers monthly. Fluorescent diffusers quarterly — they yellow with age and dim the room.
Bathrooms
- Stock paper, soap and sanitizer
- Sweep and pick up debris
- Apply toilet cleaner inside the bowl, dwell
- Wipe sinks, faucets, counters with disinfectant
- Scrub toilet bowl with brush, flush
- Wipe toilet exterior, seat, base
- Wipe stall walls and doors
- Clean mirrors
- Wipe wall mounted fixtures (paper dispensers, hand dryers)
- Mop floor with a disinfectant cleaner, getting under fixtures
- Replenish supplies, take out trash
Bar and beverage station
Empty soda gun nozzles into the cleaning solution per the manufacturer schedule. Wipe down all bottle pourers. Clean the bar mat and ice well. Sanitize the bar top. Pull the cocktail station mat and wash separately.
Storage and dry goods
Monthly: rotate stock, wipe down shelves, check expiration dates, swap out shelf liner if torn or stained. Trap mice and bait stations on a quarterly schedule with pest control.
